  • Prepping to host guests this Friday night. We won’t have much prep time, as I’m away all day Friday. I liked it so much when I made it not long ago that I’m doing an encore of the sous vide chicken confit. Really enjoyable recipe. Prepped the legs in the bags with all ingredients, will pop into the freezer now, and will dunk into the bath Friday morning as I’m heading out the door. I double bagged them because I didn’t trust the seals. Quick broil when the guests arrive and the protein is done.

    Well worth making, IMO. Very easy and delicious. Once the sous vide’ing is done, you just need to broil the legs to crisp up the skin. Pairs really well with a tart sauce that has sweetness, like a chutney, to cut the salty richness of the chicken.

    so basically 8 hours at 165f. looks like saturdays cook

    was just looking at a simple wine lemon mustard sauce with shallots but like the idea of a chutney sauce

    Wine/lemon/mustard sounds great, but I already had a few chutneys on hand and really liked the combo.

    HR is there to protect the companies interests - as long as my interests align then we are good.

    One time I had an issue with a manager, fully documented, he was married to a VP’s daughter.  You can guess how that went.

    Its been a full time job keeping the 5 letter company moving. Two weeks ago we drove past a box in the ditch and I asked swmbo if it looked open, she said no, so I backed up to see what it is... fed ex package, Wendys was the intended recipient, googled the sender and it looked like marketing bits so I dropped it off at Wendys.  
     A few days later we get a big snow, I keep the driveway plowed, however as I was walking through the kitchen I see the fed ex driver throw something in the snow bank and the end of the driveway, take a picture and take off. I am thinking, risk driving up the driveway, walk it up the driveway, or mark it un deliverable, something. Its in a white plastic bag in a snow berm beside a road that is getting plowed regularly, had I not seen him the package would have been buried. 
     Today he rings the door bell, he was backing down the driveway for some reason and backed into the yard and got stuck, he wanted to know if I had a truck (he was delivering a tonneau cover but whatever).  So I brought out my Kubota RTV and drug him up to the road.  He told me a story I had forgotten about how my wife had bandaged him up after being bit by a dog last fall and that he really appreciated us as customers. 

     Later today UPS pulls in, swings around our parking pad, drops off the package, and departs with perfect throttle control and departure momentum to see himself onto the next delivery.

    Human Resources is not a resource for the humans. It is the management/wrangling of the resource which happens to be human, the same way companies manage/wrangle supply chain, or buildings, or anything else.

    i get given so much food and treats for Christmas that by the time I finish them all it will be Easter and I will have the same shape as an egg. Rather fitting I think.

    Let’s get some admin out the way first.  Yesterday was SWMBO’s birthday and she proclaimed happiness at its conclusion. Great news. Probably because grandson sent a video note,  but the ex-dairy herd 12oz rib-eye finished by flambadou won an honourable mention.   

    But I detain you, there’s football to cogitate upon.    The table has a familiar hue at the summit,  while a sole promoted team in the relegation zone is no hen’s tooth some established names will be staring down the barrel come April. 

    Friday

    Leeds vs Forest, gig match first up.  Very winnable by either team and if so would bring the prospect of safety in to a tangible, not theoretical future.  The visitors in marginally better form but not much between them.  Really tough to call but home advantage counts, 2-1, and Palace & Spurs feel the heat. 

    Saturday

    Man Utd vs Spurs,  so the manager was the problem at Utd - or so the recent evidence suggests. And I don’t see a handful of draws in recent weeks being the surge that Spurs need to beat their funk. Routine 2-0.  But Spursy Spurs could pop out at any moment.

    Bournemouth vs Villa, the Cherries’ free fall has arrested and they are more or less safe - so it’s about how far they can climb.  Villa meanwhile have found reverse gear and face a reckoning. Are they Top 4 material or acolytes in the periphery?  Lose this and the rot could set in and it’s another nearly-season. 1-1

    Arsenal vs Sunderland, six point clear at the top and fighting hard on four fronts,  the Gunners are bringing and epic season nicely to the boil.  A tricky test but the Maccems have settled in to mid-table form, and all  but nailed on for a second PL season - the tricky one, from August.  3-0

    Burnley vs West Ham, 19th host 18th, and the visitors need to win these to keep on the  coat tails of 17th.  The Hammer s have certainly improved of late but have left themselves a lot of work to do.  A mis-step here could be pivotal, so it’s a pressure match. A draw helps neither but more than likely will happen.  1-1.

    Fulham vs Everton, the Toffees did the decent thing and pulled off a very very late win against the Filthies last time out.  The travel to the Cottagers who are aside them in the league.  Both in a safe zone of mid-table and all three results possible, but in the dullest fashion possible.   0-0

    Wolves vs Chelsea, happier times at Stamford Bridge with the new guy in charge bringing sense to chaos. The Old gold are frankly planning for next year and so each game can be classed as ‘experimental’ for them.  1-3

    Newcastle vs Brentford, so just when does Eddie Howe’s luck change and either the Toon surge up the table or he gets the boot?  Still in 11th, which is about 7 lower than the money spent would forecast.   The Bees are now solid and safe, so their trip up the A1 will be in a bubble of confidence - especially if they nick the first goal. So 0-1 just for the merriment.    

    Sunday

    Brighton vs Palace,  ah, easy - a draw.  A combined 18 games in the form guide shows just one win.  They game is 9 times out of 10 a tense draw, and the other ten percent are ludicrous 5 goal thrillers.  For myriad reasons, this is in the 9 camp.   Make it end now and 1-1. 

    Liverpool vs Man City,  despite their respective 2nd and 6th league places both teams are lacking sparkle.  Each will be glad to get this out of the way and it won’t define their final league position. 2-2

    And don’t forget, the Six Nations is under way.  A good chance for you chaps to see what space-man throw-ball would look like if played properly.

    It's now an even year thing with the 2028 Summer Games hosted in Los Angeles.  Another opportunity for CHEETO to mess with international participants and guests.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    OMG.  Condolences.  Very sorry for your loss.  Don't know what else to say.
