For any of you Canadians on here, I would strongly urge you to go and pick up one of these thick cut Tom hot pork chops at Farm boy. They are incredible!

They are about 2” thick so I coat them with a rub, put them on the egg balanced on their side until 135 and then brush on some bbq sauce (in this case I used SBR) and then open the vents and quickly sear both sides.Stormbringer said:Damn that looks tasty. Sorry, I headed south and haven’t been on here for a bit. I don’t brine them but I’m sure it would be good. They are surprisingly moist and tender due to the thickness.
