OT - Banh Mi (kind of)

I baked the baguettes, so… here ya go, @lousubcap

Second try with this particular recipe, because, the first try was wonderful. Thin, crispy crust, with a soft crumb.

Perfect for lunch. Buttered one side. Pate on the other. Tomato, garlic, ginger chutney (gifted, not homemade), homemade suan cai (lactofermented napa cabbage), fresh ’maters, cilantro, quick pickled onions, chopped Thai chile.

Looks like a mess…but, very delicious 😀

Got a head of fresh cabbage from neighbours, so may have to look into this whole lacto fermentation deal.

The bread really was the star. Made for a light, tasty sammich. I could easily house the six rolls all by myself.

I went on a crazy diet with my wife maybe 15 years ago. I got down to 156 lbs. (I am 6'0" and currently 185). To torture myself while not eating, I would watch food truck challenges. Out of all the trucks I saw, I wanted a Bahn Mi from a particular truck. Looked so good. Yours looks fantastic. To this day, I still haven't had a Bahn Mi. I need to fix this.
