I got your attention with that title, didn’t I? Not to worry, nobody was harmed during the making of these appetizers, though some of your feelings may get hurt in the comments. You’ll power through it, I know.
First up is some kind of sheet pan onion blanket. This is a Sam The Cooking Guy recipe (or STCG as @Botch calls him, also just Sam). And it’s pretty farkin good! It is also keto friendly, if you care about that sort of thing (I do not).
Starts with a sheet pan layered with parm and onion rounds (sliced wafer thin) over parchment paper:

That is some form of Italian seasoning over the top there. I believe I used some chipotle rub I had, but you can use the herbs your cousin Vinny gave you. The point is to use something.
This gets topped with calabrese salami:

Are you excited yet? You should be.
This all goes into the oven at 400F for 20 min. It comes out fried AF and then you slice it into squares, Chicago pizza style:

This is a quality app my friends. The parm and onion and calabrese come together in a glorious way. The slices fold easily and they’re so thin that it’s all so easy to eat. Worth trying if you want to impress people, or if you’re just bored with your life.
But that was not the star of the show tonight, my friends! No, the star was jalapeño popper dip. Think ABT in dip form! Here’s the standard recipe, courtesy of my sister-in-law (the good one, not the keto-obsessed nut):

I mean, just look at that. It’s glorious. Bacon and cream cheese and jalapeños and more cheese and…. mayo? Are you serious? As serious as a heart attack.
Main batch mixed up:

Yes I did overcook the bacon. Such is life. I’d actually recommend increasing the amount, because it’s there but not quite where it should be. But I digest…
Here it is in a foil pan, topped with the cracker-parm-butter goodness (I added some green onion):

Will we cook this in the oven, like the recipe calls for, you ask? HeLL no. This is going on the BGE to smoke for 30 min at 350:

The smoke legit kicks this up a notch, to an 11. It’s just to make a dip that you use with chips or whatnot but this stuff will impress your friends and trigger your enemies:

10/10, will make again. I knew it was great when the wife suggested I should make it for a big group of friends next weekend.
ONWARD!

Wow! Wish I had seen this before going to the grocery store this morning! Both look amazing, that top app looks incredible.

It’s about as easy an app to make as you’ll find. Easy to imagine lots of variations on top of that base as well.BeanHead said:Wow! Wish I had seen this before going to the grocery store this morning! Both look amazing, that top app looks incredible.
I know keto people make pizza bases using cauliflower, but in my opinion the toasted parm works a lot better. It has a decent chew to it and just tastes better."I've made a note never to piss you two off." - Stike

I am not a keto person, but it seems to be common enough that this would be good to make for parties (also I cannot imagine anyone not wanting to have a couple slices of this…).

- Great write up and pictures.- Will definitely try both of these in short order.
@JohnInCarolina thanks for posting this. -
Giving this a shot tonight. Not as symmetrical as yours and I added some extra cheese on top because I had a bit extra. Going in the oven as soon as it preheats.

The finished product was gone so fast I almost didn’t get a piece! Quite a hit for cocktail hour snacking. Thanks again for posting the idea!
