My BS is in Mechanical Engineering and MS, Industrial Engineering; and I'm a bit of a wok aficionado/freak, so I found this completely fascinating. This video was posted last year so they're still doing skilled handwork in Japan.
The first thing to notice is their CEO/owner, first thing in the morning, he goes to the shipping department and helps load boxes of woks with a young lady, and he lifts/moves the boxes (45 lbs!) himself. He's easily 10, 15 years older than me, and permanently bent over from a lifetime of labor. He wiped his brow, and said when he can't climb this single flight of stairs to his office, then he'll retire.
There's a lot of hand-work, and much of it interfacing with hydraulic presses/cutters (something that's always terrified me). There are hydraulic hammers which gradually form the sheet iron into bowls, which are hand-guided by the artisans; I recognize the even marks from the couple of "pow woks" I've purchased from The Wok Shop in SFrancisco, advertised as "hand-hammered" but I always thought a machine was involved.
The wok I'm using now was manufactured in China, it is advertised as iron and "hand-hammered" and I think it was; the metal surface just took a seasoning so much better than my previous woks, and I can actually stir-fry soft noodles without them sticking, something the rest of them could never do (save my first wok, teflon-coated aluminium (nod)).
It was pricier at $205. The one downside is it's 50% heavier than my carbon steel woks, and I'm not able to "flip" food properly with just one hand anymore; it may be a "shovel-only" for me, and that's okay. Wok on. Wok on. @ Botchi still have a hammer dishing machine that was set up to flange and dish the front heads on old steam locomotives. the frame was probably cast around the 1850's, sat in a field to stress relieve itself for 10/15 years before it was turned into a dishing hammer. its big, probably could dish 1/2 inch thick plate 5 foot and bigger in diameter. ive re babbitted the bushings, changed to electric verse the belt drive (still does run with a belt but with a motor) have had it set up as a shear, a punch, now its set up as a swedge to swedge pipe ends down from our standard size down to the smaller european german sizes. have also used it to swedge large flow mixers for the petroleum and chemical industry. i like the old machinesfukahwee maineyou can lead a fish to water but you can not make him drink it -
