@BeanHead quick question - I did the recipe but only added 2lbs of figs and not near enough liquid to cover? I feel like I am
missing something? 2 cups of apple cider vinegar and 2 cups sugar (cut down because less figs). Should we add water to cover?
(the smells are outrageous!!)

Sorry @Ozzie_Isaac because they float it never seems like enough liquid. Also when I use larger figs I will double the amount of brine because I don’t want to get to the end and not have enough to cover. Because these rest in the fridge and are not really canned I have used brine from the first jar eaten to cover any other jars that seem low. Also I use this same recipe for watermelon rind pickles (just toss in 5-10 cloves per jar instead of stabbing the rind, and peel the skin off the rind).

I live in a cul-de-sac where the neighborhood kids were shooting off fireworks. Of course the one neighbor on the street threatens to call the police. We have had monsoonal rains this week. The kids were just having fun. I told him to go back inside. He didn't like that.Midland, TX XLBGE
