Got the xl going an hour ago (Rockford lump with apple chips) set with 1/2 of my cast iron grid under the deflector to heat up. Set to 200° dome temp. With 10lbs of loin bacon (experimenting with different smoking directions to see if one is better, shooting for really round bacon slices, but I also don’t want it dry). 2lbs of maple brined skinless salmon (small portions to freeze for future salads) and our 3.5lb steak for lunch (and probably lunch tomorrow). At lunchtime it should be time to pull the deflector and crank the heat to finish the steak on the coals and lobster on the CI. Hope you all have an equally enjoyable and slow day!Comments

Flipped the steak and added a block of cream cheese. Added a glaze of maple to the salmon. It will be ready to pull in 30 min.

Autocorrect is not my friend folks… making hash this morning from the leftover beef and will saw the bone in half and add it to my bag in the freezer for future broth making. Happy to extend this excellent meal out a little bit longer.

Pre-smoking the cheese has two benefits: extra flavor and easier to mix. I also like to smoke cream cheese on a serving dish and add pepper jelly on top for the last 10 min or so. Served with crackers it makes an excellent party appetizer.

Had enough beef leftover after breakfast to make a quick stir fry for lunch. Cooked an onion and an eggplant and added the beef the end with some hoisin sauce. Very tasty.
