Low and slow 4th of July 🇺🇸

Got the xl going an hour ago (Rockford lump with apple chips) set with 1/2 of my cast iron grid under the deflector to heat up. Set to 200° dome temp. With 10lbs of loin bacon (experimenting with different smoking directions to see if one is better, shooting for really round bacon slices, but I also don’t want it dry). 2lbs of maple brined skinless salmon (small portions to freeze for future salads) and our 3.5lb steak for lunch (and probably lunch tomorrow). At lunchtime it should be time to pull the deflector and crank the heat to finish the steak on the coals and lobster on the CI. Hope you all have an equally enjoyable and slow day!
