I think it turned out pretty darnn good, (and I do recommend the Penzy’s beef stock rubbed on as a base) considering 19 hours on the XL. We stuck it in a yeti, wrapped in butcher paper, in an aluminum foil pan, covered by another aluminum foil pan then jammed every towel I could find over it, we let it rest for several hours fat side up, after cooking fat side down. It still showed steam when sliced. That image is what I had left of the 16 pounder pre cook weight, after feeding 12 folks. (We had two more from Canada that got in earlier than we had anticipated, some how the flights booked for them got rearranged and they got here just in time, wonderful that they made it) Nobody complained and I sliced up 3 platters piled up with some rather thick slices that were much more tender than I had previously anticipated. It sliced like butter.The side dishes wereI served, starting with Brussels sprouts roasted with avocado oil, roasted garlic, salt and pepper covered in Gruyère, we also put on the table bleu cheese cole slaw, and bacon roasted yukon golds with butter kaise cheese, the children brought several varieties of ice cream, and we consumed about 6-8 bottles of wine, mostly big reds, and My Beautiful Wife drank white. Lots of lager was served as well, ciders, and a few celebratory bourbons, ended the evening.Just one more thing, we also celebrated My Beautiful Wife’s Birthday. Her birthday is today. She is by far the best part of us, if you should ever meet her, you will understand immediately, and you will without a doubt likely ask her; “WTF were you thinking?”We will start our day by meeting some folks for breakfast, getting massages, and then meeting others out dinner, we let the children pick the place, I still do not know where that place is, or the type of restaurant it is.We had a blast. Congratulations on the retirement. I am sure you have the near-term all ready to go, albeit perhaps a bit down-sized by that incredible adventure/wedding in Europe.
All I will offer is the one material thing you need is a watch with the date and day of the week to keep you grounded.
. Enjoy the "every day is Saturday" lifestyle. Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
Will do. These were sitting out a couple hours, so I think you get the idea. The smoke was pecan. It worked very well.
