    @GrateEggspectations The tumeric in the mix enhanced the colour, other ingredients are coconut milk, cilantro, ghee, homemade garam masala, etc.

    Dat biryani, @Canugghead ! Wow! I've been working on good chix biryani for many years, but haven't quite nailed it.

    And, I love that the grandcanuggs are pitching in.

    Thanks @caliking After many trials and errors, swmbo settled on cooking the rice separately in rice cooker, mixing in the chicken pan juice when resting. The hybrid cook preserves the crispy skin but it's not true biryani  :)

    That's a tip I need to try. I know only a couple of people who can pull off biryani the way its supposed to be ( none of whom  live close to us), so I'm okay with any mods that taste good to me!

    Playing a pizza delivery driver. I dropped off a Detroit style pizza for a coworker that had a small surgery this morning.




    I picked up some fresh cheese from the creamery the other day that I used on the Detroit style pizza this afternoon. I went heavy on the cheese around the edges for the charred cheese crust and that was a mistake. The moisture in the fresh cheese is way different from the store bought block cheese. I had a hard time setting my crust with all the moisture of the cheese running against the crust and pan. It took a lot longer to cook this time around. I'm hoping the crust crisps up as it cools. My coworker will reheat the pizza as it was a 20-25 minute drive to drop off and I left it on her doorstep as I think she was napping. So reheating should help. The air fryer is an awesome way to reheat Detroit style pizza but unsure if she has one. So I'm not too worried about the crust as I was checking it while it was cooking but those edges were a fight!




    Super nice gesture. What a treat. Almost makes me wish I was going through surgery! Jokes aside, wishing your friend a smooth and speedy recovery.

    Andy (a stupid Zew Nealander who voluntarily moved to Australia (where everything that flies, swims, crawls or walks around on two, four, six, eight or more legs can kill you, and apparently wants to) cooks a biryani for Babe; you guys'll have to tell me if it's authentic or not.

    I'd eat the heck outta that!! I've watched a bunch of Andy's videos, and decided that I want to be reborn as Babe in my next life. She eats well, for sure. 

    But, what he made was more like a chicken korma + pulao hybrid. Which is what many/most folks do when making biryani (myself included, but I don't make the chicken in korma form). Delicious? Yes. 

    Biryani is a whole 'nutha rabbit hole. Biryani comes in many forms, so many variations. Pakistani biryani (regional variations there, too) is different from Hyderabadi biryani is different from Kolkata biryani is different from... you get the idea. 

     The pinnacle is "kacchi" biryani IMO ... "raw" biryani, i.e. raw marinated protein, uncooked rice, lots of other magic stuff that cooks together. End result is the protein cooks just right, the rice is perfect There's this interface of spices, yogurt, meat, rice that is hard to describe. It takes a pro/master to get it right.

    I'm pretty sure a few years ago someone would've been her saying biryani is overrated, you should be cooking prime rib.

    I don't agree, but this detour reminded me for a moment of one of those infamous brisket hating threads.

    I think we'll see folks saying biryani is overrated in a couple of years. Its been trending up for the past 1-2 yrs, in which time butter chicken has kind of been trending down. Like any other food fad, I guess.

    There’s a restaurant/seafood supplier in Ottawa called The Whalesbone where I enjoyed oysters with a friend one very memorable time. You paid by the oyster, and some were just massive. Like, the size of a big steak. Had to cut it up to eat it.

    Lol ya, these are even a bit intimidating but very good. Had the huge ones once before at Rodney's on King in Toronto. Love that place.

    With those oyster comments the GWN has the inside track compared to lower 48 flyover country.
