First of all, make sure to soak your corned beef brisket in water for a couple of hours to release some of that saltโ€ฆyouโ€™ll thank me later! ๐Ÿง‚

I got my XL set up for indirect cooking at 275ยฐ, I hit the meat with a little pepper and got that brisket on. ย After smoking for about 3 hours, Iโ€™m to the braise it went. Some Guinness (duh!), diced yellow onions, W Sauce and beef broth and back in the Egg it went. Another couple of hours, it was time to shred. It was still a little tight, but thatโ€™s ok. I kept it in the braise for another hour and then it was time to plate. ย 

A couple split top rolls and some provolone cheese slicesโ€ฆDijon mustard on one, and let me tell you that these were AMAZING! And I made enough for โ€œleftoversโ€ on Monday! ๐Ÿ€๐Ÿ’š๐Ÿ€ย

    Looks delicious! The thing I like about my corned beef cook is I dice up my left over and then divvy it up and seal it in FS bags to use for big breakfasts of corned beef hash, hash browns and poached eggs!
