I’ve got some ribs to cook today. Not going to have as much time as I had thought originally. I usually smoke and the whole process is about 5 hours.
Any tips to do a faster cook?? Direct grill at like 300 with a lot of attention? Maybe just still do indirect but do hotter and wrap?

What has worked for me over the years: 350º indirect starting bone side down for 1 hour, flip for 1 hour, then go direct flip and mop for 10 minutes and repeat 2 more flips and mops.Re-gasketing the USA one yard at a time

I've done them a couple of times (babybacks), and they turned out quite well. I haven't wrapped them in the past. Turbo ribs. It's about the only way I do them now..... unless more adult beverages are needed or desired
