Had a fun opportunity to cook over at a Wagyu farm near my house over the weekend. The cows seemed oddly interested and confused!
Ribeyes, Skirt, Tri-Tip, Denver’s and some Wagyu burgers. All fantastic, but man, the Denver is quickly moving in to my top 3 cuts!

Beautiful shots with rolling smoke and high end proteins against the snowy backdrop of the farm.As with others, I was unfamiliar with the Denver cut. Don’t think I’ve ever come across that before.

Not a “shop”, just a farm right now. But they have just recently been sending cows to a processer in VT, so they sell direct. Reach out to them from their contact on their website. ”The Denver steak originated in the 1990s as part of a research project funded by the Cattleman's Beef Board. The cut was introduced to the public in 2009.”
I love a few things about it…it’s got a great beefy taste…no fat cap, but TONS of intramuscular marbling…and because of their shape, it’s almost like cutting a sushi roll. Uniformed pieces and they look great on camera!

looks like i can schedule a time slot for a pickup at the farm which is pretty convenient for mefukahwee maineyou can lead a fish to water but you can not make him drink it -
