Had a fun opportunity to cook over at a Wagyu farm near my house over the weekend. The cows seemed oddly interested and confused!

Ribeyes, Skirt, Tri-Tip, Denver’s and some Wagyu burgers. All fantastic, but man, the Denver is quickly moving in to my top 3 cuts!

    nice looking feast. never seen a denver cut steak around here, might swing in there on my way north sometime. is this a new shop, looks to be fairly close to 95

  • Beautiful shots with rolling smoke and high end proteins against the snowy backdrop of the farm. 

    As with others, I was unfamiliar with the Denver cut. Don’t think I’ve ever come across that before.

    Not a “shop”, just a farm right now. But they have just recently been sending cows to a processer in VT, so they sell direct. Reach out to them from their contact on their website. Alpine Butcher in Lowell also always carries Denvers.

    Nope…I am on BGE’s Team Green…their ambassador/influencer team and I’ve been fortunate to work closely with our Northeast distributor up here. Just love cooking on the Egg!

    The Denver steak originated in the 1990s as part of a research project funded by the Cattleman's Beef Board. The cut was introduced to the public in 2009.”

    I love a few things about it…it’s got a great beefy taste…no fat cap, but TONS of intramuscular marbling…and because of their shape, it’s almost like cutting a sushi roll. Uniformed pieces and they look great on camera!

    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    looks like i can schedule a time slot for a pickup at the farm which is pretty convenient for me
