Pho’king Satisfying

(Pardon the title. It feels like it should be Friday.)

Made some fried chicken last weekend (https://eggheadforum.com/discussion/1233895/buttermilk-fried-chicken-and-fries-with-coleslaw#latest) and used the carcass to make stock, without any definitive plans. 

Gave the fridge and freezer a once over and decided that I had the makings of a pho, absent a few ingredients that could be procured with relative ease. 

Started by quick pickling some sweet onions, bell peppers, carrots and celery last week. Also did some finger hot peppers (prepared apart from the other veg, so as to not traumatize the children - even though they handle the heat!). We like it hot. 



Soft boiled some eggs and resisted slicing them until plating time.


Put the steel to work on some broccoli (stems on left, florets on right; added to the pan in stages to ensure even cooking) and green onions. 


Threw an Asian marinade together and fired up the gasser for a pork tenderloin. 






Got some ginger going before throwing in the broccoli and green onion. 


Toasted some sesame seed for some added flavour and crunch. 



Boiled noodles in the chicken stock, with lime juice for acidity. Then gradually started assembly. 



Topped with some hoisin sauce for sweetness, the toasted sesame seeds and some fresh coriander. Daughter insisted on doing the finishing here. 



Would absolutely do again. Was admittedly ambitious for a weeknight though. Lots of components, but I enjoyed every minute.  

I generally follow recipes, but instead just blindly felt my way through this one from start to finish, which felt really good.
