My First Tomahawk Ribeye and First Caveman Finish

Costco had them at $10.99/lb. for choice, not much marbling but still decided to give them a go. During Covid shortages I picked up various off-brands (meaning non-Rockwood) of charcoal. KJ Big Block XL is my last one of that stash. Total truth in advertising here, this stuff is big. Not really suitable for my LBGE, good product though judging by this cook . . .
On we go indirect at 250ish with SPG and some oak chunks, it's a bit over two pounds which was plenty for the two of us . . .
The trusty Polder was dead, needed a new AAA battery, it has no on/off switch so battery only lasts about 5 years. Also first cook with new Thermo that this forum is responsible for me purchasing . . .
We like med-rare, was unsure if Caveman might send it towards medium range, so pulled it a bit early at 120'. Took about 1.5 hours to get there . . .
Let the steak rest above the deflector stone while waiting for coals to get hot and happy. This took longer than expected, 20-25 min, due I think to the big charcoal pieces. I broke them up some to get a smoother searing surface . . .
Into the fire we go, went 60 seconds on each side and about 20 on the fat rind edge . . .
Finished shot, then sliced and served with creamy cukes/onions and Bush's beans. I also lightly roasted a habanero to add to my beans. Steak was good but not great, blaming that on the poor marbling. The caveman part added a great char and was fun to do. Will be doing it again for sure.
