Caprese Pasta Salad

One of those very simple recipes that always hits the weekly rotation. So good it doesn’t even require a protein.
Caprese Pasta Salad:
-12 oz box bow ties, cooked and drained
-About 10-15 leaves fresh basil, rinsed and chopped
-1 or 2 containers grape or cherry tomatoes, sliced in half
-2 big cloves fresh garlic, minced
-At least 4 oz fresh mozzarella pearls
-1/4 cup EVOO
-Splash or 2 of aged balsamic vinegar
-S&P to taste
Combine tomatoes, basil, mozzarella, garlic, EVOO in large bowl. S&P to taste along with a couple of splashes of balsamic. Stir to incorporate, cover loosely and allow flavors to marry on countertop for at least 45 minutes before adding pasta.

Cook and drain pasta. Place hot pasta on top of tomato mixture. Allow to rest for about 10 minutes, then serve.
