One of the best recipes I’ve had in this regard:
i) setup the Egg for indirect cooking
ii) light the charcoal in the middle and let the fire gradually spread to the rest of the pile
iii) close the dome and let it come up to 225
iv) order a pizza

I prefer to make these in an oven, but I'm sure this recipe could easily be smoked on an egg.
SALTED NUTS
INGREDIENTS:
1 pound raw pecans or English walnuts
4 tablespoons melted butter
2 teaspoons salt
Preheat oven to 350º. Place nuts in large bowl. Pour in melted butter and mix well to coat nuts. Add salt and stir again.
Spread nuts in a single layer on baking sheet. Bake for 20 minutes. Stir occasionally.
Let cool down on the baking sheet.
These freeze beautifully if wanted, but they also can be left in a sealed container in a cabinet.
CAUTION: HIGHLY ADDITIVE!!!

So @johnmitchell I’m a year late to this request, but I hope you are still looking for a healthy snack. I cut up broccoli into chunks or use broccolini, grill direct at 400° for 15-20 min until it is charred (flipping once after 8-10 min). I use a grill mat to keep from losing bits. This is good hot or cold and will keep in the fridge in a sealed container about 5 days, if it lasts that long. If I am in a dipping mood I dip in a low cal Thai hot sauce.
