  I did my first beef ribs yesterday. Only took two hours at 270ish. They were tasty, but not much meat on them. I thought I was getting a cut of something along the lines of what is in the original post. Was tough to tell by the packaging.  

  What were yours called?  I believe yours are "back ribs".  The ones in the OP are "Plate Ribs".

  Froze the leftovers. Separated the meat from the bone. Reheated using Sous Vide.

  Exactly what I ask for at the butcher. Plate Ribs. Get a 4 bone piece, should be around 8 lbs or so.
