My First SRF Brisket Adventure

This was a 16.9 lb Black. I watched a video on the SRF website that trimmed it a bit differently than I normally do, so I decided to try it out:

Trimmed 4lbs of fat and 1lb of scraps for future ground beef. Seasoned with salt, pepper, paprika, and garlic powder.
Using my 11 year old CyberQ, I stabilized at 250, put it on at 10:30 pm and went to bed. Woke up around 5:30 and the Egg was at 200, brisket at 160. I removed the fan and finished the cook at 240ish. Wrapped and at 10:00 am it probed like butter at 205. FTC for 3 hours, lunch at noon.
For me SRF is like an expensive single malt scotch, hard to go back to Cutty Sark once you have tasted the difference!

For sure, I moved to TX from Seattle10 years ago, never noticed a brisket in any grocery store up there! I drink vodka now, can't afford the scotch I like.lousubcap said:
