Rib Question

My ribs curled up in an unusual way I’ve never seen before. They probed at 199 when I saw them so I was just about to sauce them. Was just curious if this was normal. Pic when I saw them and a sauced pic I ran at 300 unwrapped the whole cook

This kind of thing is just caused by differences in expansion/contraction between one side and the other. Did you leave the membrane on?

Paper towel is your friend for removing rib membrane.Ubi panis, ibi patria.

Will also add that the membrane peels off much easier if you give them 10 minutes or so at room temperature first, rather than after pulling them straight out of the fridge.Stillwater, MN -
