Beauty cook. Mind sharing the recipe please? Had looked into this before Xmas, but the recipes I saw were for a tenderloin, rather than for filets. I have filets at the ready, so would love a corresponding recipe. Thanks.

Salt the filets and leave at room temp for an hour. Sous vide cook at 130 until the filets reached 120. Quick 30 second sear in cast iron with tallow, and then in the fridge for a few hours. In the same cast iron cooked down mushrooms, shallots, garlic, and white wine. Store in the fridge for a while.Thawed puff pastry rolled out, layer of prosciutto, layer of the duxelle. Rub down the filet with Dijon. Wrap up and the puff pastry, and coat in an egg wash.Cook a second time around until the filet hits 125, and then 5 minute rest before serving with whatever sauces you prefer.Brandon - Ohio
