Porchetta on the BGE, Friday Instructional Video

As some of you know, I recently ordered a porchetta roast from SRF.  I won't be actually looking to smoke it for a while, but in the meantime I've been looking up recipes and approaches online.  The other night, I came across this gem from a YouTube channel called The Dark Side of the Grill.   My friends it is amazing:

    So many quotable lines.

    I suspect he licensed that music for his day job and decided to use it for his side hustle too.  Also, the cross contamination going on was bugging me and wrapping the beautiful crispy skinned roast in tin foil at the end!  No way, that will steam and soften that skin.

    @JohnInCarolina I have every confidence you will not give your above finding a go, unless you buy a rotisserie rig for your BGE.  The dishwasher is your way out here.  Never mind the finish temperature...
    All the above in jest, once you execute the cook any detailed insights to pass along would be appreciated.

    I thought that I might see Ron Jeremy on this Vid.....He has been in the news lately....
    I drink cheap beer so I can afford good bourbon.

    A fugitive Italian gangster's urge to show off his cooking skills has landed him in jail after seven years on the run.

    Italian police tracked down Marc Feren Claude Biart, 53, through the culinary videos he had uploaded to YouTube.

    While he carefully hid his face, he failed to disguise his body tattoos.

    The alleged member of the 'Ndrangheta crime gang was arrested in the Dominican Republic last Wednesday and has now been extradited back to Italy.

    Biart had reportedly been leading a quiet life in the town of Boca Chica, police said in a statement.

    He had been on the run since 2014, when he was wanted by police for allegedly trafficking cocaine into the Netherlands on behalf of the Cacciola clan of the 'Ndrangheta mafia.

    Well, he used salt and pepper, then a few ingredients later he used coarse salt. Fennel might be a little exotic for salt and onion guy.

    That robe was triple knotted.  I think he knew a robe malfunction would kill the moment.
