The little piece of skin was like a pork rind. About halfway home. Enjoyed champagne and smoked trout dip for an afternoon snack.

Made a Turkey breast with all the fixings. No need for a full Turkey, we don’t like most of it. Marinated for 24hrs in achiote adobo.+++++++++++++++++++++++++++Austin, Texas. I'm the guy holding a beer.

Thermo pop fell in the oil with the turkey. Took me a good minute to fish it out and it works fine - took a minute or two to walk the temp back down.

Had a wonderful day with friends today. Semi-traditional spread, and everything was delicious. Ended up making sourdough stuffing , too. Made my first turkey gravy today with the backbone and neck of a spatchcocked bird. Little white wine, some chopped vegetables, chicken stock, fortified with some turkey drippings and soy sauce. It was pretty fabulous. Stoked to get such a good result on my first go. First time making mashed potatoes too. Those were great too.Plymouth, MN

I'm super happy with the turkey this year. I did Mad Max's Method with a couple variations. i didn't have his rub, so I looked at the label for ingrediants and tried to make it myself. It had the typical disclaimer of "spices" and someone on an old thread suggested it had lemon peel. I added citric acid and smoked poblano pepper powder as spices; plus I added maple sugar. The other change was I did a cinnamon brine for a day and a half.

Smoked a heritage breed pasture raised turkey from a local farmer over some pecan chunks, mashed potatoes, made some Hokkaido dinner rolls, roasted root veggies, broccoli w/ cheese sauce, and stuffing.
