    I don't think I'd like any steak cooked 20 minutes direct unless it was 3 inches thick.
    2.75" was my last tomahawk ... it was a beauty!  But we did sear at like 600F, then turned it down to 375F to finish.

    Fair enough if it's cooked no more than MR.  Being cheap and poor, we rarely get any steaks thicker than a half inch.
