Triming whole packer brisket from 12.5 pounds to 9.5 pounds

I would assume one would time the meat from the 9.5 pounds correct?

Yes, but only use time for your end target ,cook by feel and give yourself a few hours to finish before your end game targetVisalia, Ca @lkapigian
