As it turns out, a good sized chuck roast will not fit in one of the 11x10 bags so the USV20 loses one point vs. its larger sibling.

The larger model also has slightly more head space.It would have likely fit and sealed in a 13" long bag. The roasts long dimension was a bit longer than the bag opening so right off it wouldn't quite squeeze into the bag. If I had been able to squeeze it in the thickness and width was enough to change the geometry of the bag such that it might not have been possible to seal.

The seal bar on the long side just doesn't make sense to me.
