    As it turns out, a good sized chuck roast will not fit in one of the 11x10 bags so the USV20 loses one point vs. its larger sibling.

    The larger model only adds 3 inches to the bag. Would that have done it for you?
    The larger model also has slightly more head space.

    It would have likely fit and sealed in a 13" long bag. The roasts long dimension was a bit  longer than the bag opening so right off it wouldn't quite squeeze into the bag. If I had been able to squeeze it in the thickness and width was enough to change the geometry of the bag such that it might not have been possible to seal.
