Deboned a chicken, stuffed it with bread stuffing and sweet maple sausage. Wrapped with... bacon.
90 minutes @ 350-400F
IT was 170F, let it rest for 10 minutes, final IT 178F
Served with beets salad (beets, feta cheese, olive oil, thyme, and garam masala), baked potatoes, and fruit chutney.

Now into the weeds, how long does it take you to debone the chix as my last one ( a couple of months ago after not cooking one for well over six months) took a good 20 minutes while pausing the video linked here many times.

You did a neat and clean deboning job. Beautiful bird. Just repeat that two more times and you have a turducken, easy peasy

I am down to about 5 minutes on the deboning process. I used to do these about once a month or so but last time was about a year ago. I forgot how good they are and I think that they are even better sliced cold the next day. 😳

@Canugghead The bagelwiches are from Costco, they are flat bagels without a hole to make... sandwiches. Foie gras would probably be good but I purchased a whole tube of homemade liver pâté from a Balkanese charcuterie so it has to go 🤣😂. I LOVE foie gras but I would seriously hesitate if I had to chose one or the other, this liver pâté is ridiculously good.

Before COVID.... it was on our regular rotation when entertaining...
