Made a few briskets for a friend’s office Christmas party. It is a pharmacy and the brisket smell filled the store. Customers pulling up to the drive through were asking what smelled so good inside. Took all night but well worth it. I saved part of one for Christmas Eve brisket chili. Costco prime for the win.

@loco_engr Daniel Wright the builder of my gravity fed unit told me to cook this way. You get full smoke and you don’t have grease fire risks or anything to clean up. Works extremely well for removing and wrapping. It does take up some real estate but the unit is large enough to cook anything I can dream up.Southeast Louisiana

@ikapigian The racks are from my CGS adjustable rig. They fit perfectly over a disposable foil pan.Southeast Louisiana
