So I called him into my office. I showed him the answers he gave to some of the problems, and the solutions. I asked him to explain his answers.
With a straight face, he told me that I had told the class they could use any material they wanted to prepare for the exam (this was true), and that during his studying he had stumbled across these problems on the internet. And since he had a photographic memory, he had been able to memorize them.
So then I said, well, that does seem like a perfectly reasonable explanation. I took back his exam and the solutions, and I said since he had a photographic memory, surely he could reproduce the answer he had given to problem number 3 at the board in my office?
He said "you see, Professor, the thing about my photographic memory is... it's only temporary."
I gave him the option of presenting that argument to an honor council of his peers or just taking an F on the exam.
He took the F.

Whatever, you already said you weren’t responsible for the menu. You just recreated canned recipes. But whatever the cool thing is for you. That is just one article I also posted clips from another outlining the training required for non school trained chefs. Having worked in the field you probably know what a real chefs responsibilities entailed. Like the menu. Like the food costs and profitability of the restaurant. Hiring. Firing. Here’s another article for you to ponder. Read the comments by the industry pros too. You must have chosen to only read parts of what I have written because I stated long ago that there is a non educational based way to becoming a chef, but it is a long and arduous journey. Like some above have stated, it may darn well produce even better chefs in some cases. It isn’t the experience you described. You describe the tip of the iceberg. Not nothing mind you and if you had stuck with it for another five years and made a point to go work for the right chefs to properly train you, I have no doubt you could have achieved the rank of chef. I don't think this is possible for many on this forum. They simply have to try to prove themselves right and always get the last word in. @buzzvol I was wondering that myself. It seems a courtesy to me to respect the degree they have attained. That said, many PhD's I know will just go by their name without the title. I've only met one or two pretentious aholes that insisted on the designation.Coleman, Texas
