Been lurking for a while, finally got approved to post!
I am doing the MadMax method, but am wondering if I should put the butter under the skin on the breast, or just on top? Watched a youtube and they put the butter underneath. They said you do not need to baste this way.

Recipe I read rub with butter mixture and recommended working under skin.

We do under the skin but we usually do weird science experiment turkey (again this year) where we glue parts together, wrap them in skin, cook them sous vide before frying.Keepin' It Weird in The ATX FBTX

I pasted mine on top like the mad max method ... but I also injected chicken broth into the turkey to keep it as moist as possible.
