Tootsie's Pork Steaks

Never heard of Tootsie or a pork steak until seeing both on Netflix. But it looked amazing and so when the farmer I bought my half a hog from asked if I wanted any steaks cut off the butt, I asked for two cut 2 inches thick so I could try out Tootsie's method on the egg. They've been on at 250-275 raised direct for about an hour with two nice chunks of post oak. I just mopped for the first time, so got another 4 or 5 hours to go.

No plated pic because I snuck a bite as I was cutting it off the bone and it was on. Pulled away from the bone very easily, had a nice bark but yet was very tender and smoky. Will definitely do this again.
