This was super easy and very satisfying!!  Barbacoa action at the house!

Pair this with one of the salsas in Cen-Tex’s salsa thread!

Just a hack that makes some $hitty BBQ....

Yes sir. I fully support your position.
The very best meals in my opinion, are simple meals elevated by quality ingredients. That’s a feast in my mind.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

Funny you mention that. Last week we threw an old frozen chuckie in the pressure cooker with frontera barbacoa marinade, then drained and shredded it, and crisped it in the air fryer. Outstanding meal in about one hour.

Crisping it in the air fryer is an interesting twist.   What is your time and temp?

(I’d want to stop short of drying it out.)

Yes, sir.  Are beef cheeks readily available?  I'll have to reach out to my meat guy and see if he has them.
