if you buy the costco pork belly (typically around 11-12 lbs) split it into thirds. 11 lbs of pork belly burnt ends is almost too much. Almost.
I took one of the thirds and brined it for a week with sugar, salt, pink curing salt and some other odds and ends. (Google and Pinterest have a ton of recipes). Then smoke at 225 with apple or sugar maple until an IT of 145. Let that cool and slice as thick or thin as you want. Fry it up and it’s the best bacon you’ll have, at a fraction of the cost of store bought.
I saw a thread a while back about a “from scratch BLT”. One dude made the bread, grew his own tomatoes and lettuce, and made his own bacon. I think he may have mixed eggs and oil for scratch mayo as well. Whatever it was, it inspired me to make my own bacon. I’m glad I did. It’s a good time and deliciousLBGE since June 2012
