A jerk walked into a meat church

The joetisserie has become my favorite accessory. I had my best results yet this past weekend. One chicken with meatchurch gospel, the other with walkerswood jerk paste. I went with a lower temp (320-340) and peach chips and apple chunks.

How was the jerk paste? I LOVE jerk chicken but I never cook it at home. I like the flavor but not a ton of heat and I'm afraid to order paste's or rubs online. I like spicy and I'm not afraid of heat but I've tried a few jerk rubs that were off the chart hot.

Walkerswood does make a MILD jerk paste that, in my opinion, still packs a little heat , but is noticeably tamer than the original.Lowcountrygamecock said:How was the jerk paste? Bought a bottle of both mild and regular.

Another milder jerk alternative is a marinade using McCormick Perfect Pinch Caribbean Jerk seasoning. 3Tbsp seasoning, 3 Tbsp vegetable oil, 2Tbsp soy sauce, and 1 Tbsp cider vinegar. Very little heat, but still has that unique jerk flavor.
