Morning gents!! New to the forum and just wanted to thank everyone in general for all the info I've already gleaned from you guys. I've been in BBQ game a long time, but brand new Egg owner. I had the advantage of cooking on a close friend's Egg for some years leading up to owning my own, so I had a bit of a leg up if you will. But you guys filled in a lot of blanks for me. IE getting the alignment right/underbite cured up on the front end (something that would have driven me nuts).
Anyhow, first cook to break her in was 4 rack of ribs and a bunch of veggies for salsa. Salsa was whip-ass, the ribs were a little dry to my taste but the fam and guests were stoked. We're always our own worst critic. Excuse the rigged up raised rack, Woo and AR w/ extra grates/stones along with KAB and bunch of other stuff will be here this week...as an aside, this is a crazy expensive hobby y'all lol. But I'm the type I can't own something like this and not buy all the cool toys to go with it. SMOBOT coming very soon, that thing is so cool.
Also did some choice ribeyes the other night (no pics on those, sorry). Sous vide for 2 hrs+ @ 120 then seared on the XL. I will say this, a full load of lump left to its devices with open vents is not to be taken lightly. If those steaks needed more than 2 min/side it woulda been UUUUGLY lmao. Had to let it cool with closed vents for 15 min just to grill burgers for the kids haha. Anyhow, as you can tell I'm already enjoying the hell out of this thing. Looking forward to plenty more adventures (and pizza....so...much....pizza lol).

Great start on your own egg, fire roasted veggies are the ONLY way to go for salsa.
I have told other newbies that have come on board, having a BGE changes EVERYTHING. Like your bank account and always thinning wallet.

That’s for showing here guys. In the time I’ve been looking around on here this has seemed like a very inclusive forum, not as confrontational or aggressive as some others Ive frequented in the past. Feels like an enjoyable place to spend time.And yes, I can feel my wallet and chances for retirement shrink by the day lol.

I’m in Apex now, but lived in Charlotte area (Matthews/Davidson/Pineville) on again/off again for close to 20 years. Every time I’d move away from NC (GA/FL) I was always angling to get back lol.
