I’ve owned 2 large eggs for @15 years. I cook on them at least 3 times a week. During the spring and summer they are used just about every day. I have been a member here for over 4 years, maybe longer. You guys have posted loads of amazing cooks. I have never seen this. I’m not judging. This just isn’t in my wheelhouse. Behold! Cow Head!

I respect the attempt to use the whole cow and would try some if offered to me, but this isn’t something I would seek to do at home.

This is traditional barbacoa. It’s usually braised down in a giant pot these days but the traditional way is to bury it in a pit. There is only one place left in far south Texas that has the pits.this is actually pretty close to the authentic way to do itKeepin' It Weird in The ATX FBTX

Have a butcher close to home that had a pig head in the case. One of these days when the wife is out of town Ill gather the boys for tacos and cook one up. Lots of good meat on the heads.

I've done pig heads several times and a cow head once a loooong time ago.
Both very good eats but I din't try eyes or brains...I'll eat cheeks and lingua and all the other 'nasty' bits all day long.
Takes a long tim to render those suckers down and the result is not for you if you are watching your intake of fat... -
