“Country Style” Pork Shoulder

Greetings friends,

costco had country style pork shoulder today - it’s long strips of butt, about two inches thick. 

So I did them with my regular butt rub. Around 330 degrees. Took two and a half hours. Chopped. 

It’s like concentrated bark. LOTS of flavor. And great in a sandwich. 

I’ll definitely do them again.

    Thanks - I make my own rub 1:2:1 by weight
    garlic salt
    light brown sugar (2)
    coarse ground black pepper

    I occasionally add cayenne and/or paprika to spice it up, depends on how well I know who’s eating it.

    Why? Maybe a dollar or two per pound?  Anything "rib" costs more than butt/shoulder.

    Country style ribs are sliced pork shoulder and typically run about 5.49/lb here. I buy the whole butt on sale between 1.29-1.99 and have the butcher slice it.  Enough for a good cook and vac seal package for another day.
