I don't have a recipe for making your own, but this rub is really good!

  • Welcome. I like to salt a day or more in advance so I make a rub without salt.

    Mickey’s Coffee Rub

    1/4 cup salt

    1/2 cup brown sugar

1/2 cup pure Ancho Chili powder (ground Ancho pepper only, noting else. Can be found on Amazon)

1/2 cup expresso coffee ground very fine

    1/4 cup garlic powder

    1/4 cup ground black pepper

Save leftover rub in a jar in the freezer to keep fresh

    Billyray’s Rub Recipe

1 Tablespoon finely ground expresso coffee

1 Tablespoon pure Ancho Chili powder

    1 teaspoon cocoa powder

    1 teaspoon granulated garlic

    1/2 teaspoon ground cumin

    1/2 teaspoon ground fennel seed

    1/8 teaspoons ground allspice

    4 tsp kosher salt

2 tsp fresh ground black pepper

    Memphis Dust by Meathead

    3/4 cup dark brown sugar

    3/4 cup white sugar

    1/2 cup regular paprika

    1/4 cup garlic powder

    2 tablespoons ground black Pepper

    2 tablespoons ground ginger powder

    2 Tablespoons onion powder

    2 Tablespoons rosemary powder

Simon & Garfunkel Rub (poultry only)

    1 Tablespoon dried crushed parsley

    2 Tablespoons dried crushed sage

    1 Tablespoon dried crushed rosemary

    1 Tablespoon dried crushed thyme

    1 tablespoon dried crushed oregano

1 tablespoon dried crushed bay leaf

    1 tablespoon  ground black Pepper

    1 tablespoon sugar

Instructions: Salt meat separately according to taste and if brine has been injected, mix the rub I tablespoons with one tablespoon of olive oil, rub the bird all over, let marinade in the fridge from 1 to several hours uncovered.

I would suggest the Memphis Dust for pork. None of these are my personal recipes. I got them all off of here . When possible I listed the author.

I make most of my ribs...except for pork. I buy Killer Hogs in the 5# bag. And fill my shakers. Good stuff!
  • Thanks for all the recipes and recommendations. I'm throwing on my first set (three racks) of baby backs in the morning and I'm already drooling (or maybe that's just the Scotch).

@MDWhittaker: Congratulations on your new egg and welcome to the forum!

How did your ribs turn out?

@Gulfcoastguy: What do you season with Mickey's coffee rub?

So far a lot of turkeys and a beef roast. Maybe hamburgers but if so it was a long time ago.
