Working on spreading the Caveman message-

Friday night and all quiet on the forum so below is a two pic thread  (with marketing) extolling why you should give caveman a shot. If you really enjoy a steak with a crust then this is how to achieve it.  If you want end to end uniform and forum sameness then this is not for you.  B)

Steak greater than 1.25" thick and the cook with a few bourbons consumed.  That is excited Rockwood right there.

    It took me a looooong time before I tried caveman cooking. It is a ton of fun and entertaining for guests. It also produces a good product. I’m glad you posted this. 

    Edit: And it almost goes without saying - outstanding cook.

  • Do you need to do any prep to the coals to minimize ash? Or is it a negligible amount?

    Picture quality a dead giveaway.  Yup-new phone (with camera) a few months ago.  I'm sure regression is just around the corner...

    No prep work required beyond having a fairly uniform bed of  lava so that you can flip to a different area of coals.  Sometimes a stray piece of lump will stick to the steak but it is not common.  FWIW-

  • Charcoal sticking isn't usually a problem, unless you are clumsy, like me, and grab a piece of charcoal with the tongs. That's why Tomahawks are so nice for caveman...they come with a handle!

    I have done caveman a few times and each time is meh on steaks. Works well with smaller pieces since you can avoid cool spots that leave the steak with a patchy appearance. I now have a small grid that I can set right in the coals to still allow for some air circulation for convection. I get a much better crust that way.

    Decided to give this a try finally.  Flank steak, sprinkled with lime juice, salt, and Dizzy's Red-Eye Express (coffee-based).  Flipped 4 times, maybe 60 seconds per flip.  Couldn't see any stuck embers or ash, so tented with foil for about 8 minutes, then sliced thin against the grain:
     

     
    Just a tad more done than I wanted, but extremely juicy.  And nothing elevates a Monday like...  Tacos!

    Never done one start to finish but I have done them with a reverse sear cook. Always love the finish of a Caveman!
