Beef ribs and baked beans

There was an earlier thread about posting boring cooks since the forum has been a little bare lately.  So this is my boring post. Smoked these up tonight with post oak. Sauce started with a can of tomato sauce, then heated that up and added brown sugar, vinegar, molasses, seasonings, etc until it tasted good.

    ok so the ribs look amazing. But I want to know exactly how you make the beans.

    lol thx guys. @blind99 , just canned beans with a little ad libbing. These had some mustard, brown sugar, bacon, vinegar, molasses, etc and a little of the rib sauce.  The smoke is really what makes them.

    Great combo. I’ve used brisket burnt ends in baked beans. A whole different dynamic than when using pork. Yum!

    I'm a big fan of beef ribs and that meal looks quite hardy.  Nice smoke ring as well.
    It's "Smokin Gal", not "Smoking Al".

    I've never had much luck with smoking baked beans. User error, I suspect. Still, I love my recipe for pressure cooked baked beans from scratch. No canned beans involved (too much sodium for my cardiologist). No smoke, but very good! I suppose, once done, I could put them in the egg at a low temp with some smoke, but I've never tried that.

    Ingredients

    1 lb dry navy beans

    2 bay leaves

    6 Cups water

     

    2-3 slices bacon, chopped

    1 large onion, chopped

    2 cloves garlic, minced

     

    1/4 Cup + 1 Tbls molasses

    1/4 Cup Gulden’s spicy brown mustard

    1/4 Cup tomato paste (can use whole 6 oz can)

    1/2 Cup + 1 Tbls brown sugar

    1 Tbls Worcestershire sauce

    1 Tbls chili powder

    Pinch, ground cloves

    1/4 tsp salt

    1 tsp vinegar after the cook

    Number of servings 6         

    Directions

    Place beans, bay, water and 1 Tbls oil in PC, bring to pressure for 25 min. Cold  water (or instant) release. Drain beans reserving 2 cups of liquid. Place beans and 2 cups liquid back into PC.

    In skillet, cook bacon till it begins to render fat, add onion and garlic and cook till they soften a little, about 3-4 minutes.

    Add molasses, mustard, tomato paste and spices to skillet.Stir to mix well.

    Pour this over the beans, do not stir. Return to pressure for 15 min, then under running water to release (or instant release with Instant Pot). Remove bay leaves. Stir in vinegar (1 tsp).

    @Carolina Q nice, thanks for the recipe! The added salt is killer. I ate a bowl of pasta with my favorite sauce and later felt like I had walked through the desert. Turns out it had double the sodium of some other sauces. Damn you Rao.
