Beef chuck short ribs (no bone)

I picked up a pack of Beef Chuck Short Ribs (no bone) at Costco. They have great fat marbling in them but I have no idea how to cook them. I've searched a few recipes and have found bone in short rib recipes but not sure how the lack of a bone will impact the cook... Has anyone cooked these before and have recipes, tips, tricks?

I buy the boneless chuck short ribs all the time in the Costco cryovac package, then cut them up the way I want. They usually cut them too small to cook properly (at least the way I like them).Will be interested in how your SV method works out.I always cook mine just like the ones with the bones (but, as I said, I cut them much larger than Costco does).Large BGE

I cook them like a steak. Medium rare is excellent. Just hot and fast for a couple minutes per side.

Whenever I'm in the mood for a beef stew, I search out boneless short ribs. There is a lot less prep then buying a hunk of meat. And you get a better result than typical supermarket "stew meat".
