Bison Burgers. easy. good.
Options
Kinda forgot how good these are - added 2 tbs of finely diced shallots, then just S&P. Raised direct to start, then finished hot in CI grid while melting pepper jack. Tons of sautéed onions, lettuce, mayo, jalapeño mustard. Good. Easy. Sorry if last pic is gross.

Great looking burgers. No grossness to the last pic in my books.When I bought my first house, we had a local butcher who always had an abundance of fresh ground bison meat on hand. My wife and I would probably eat bison burgers once a week. I miss that place and time.

thanks - broke in my new carbon steel pan (De Buyer Mineral B ) by carmalizing 3 onions without any plans. Then pulled the bison out of the freezer . . funny how meals develop.

I like bison burgers, but the ground meat is priced at double regular ground sirloin (here in cattle country). So I do order it when we eat out, as several local restaurants list it on the menu.
