I have a 9lb turkey breast that I will sorta do Mad Max style. Should I put ice bags on the breast?

No. The reason to ice a breast is that it cooks/dries out before the dark meat is ready (on most any bird). Since you're only cooking the breast, no ice adjustment required.
It must be noted that "Ice Breast" WBAGNFARB!!

Was just there last Tuesday and to say they “dipped it” in butter would be an understatement. Forgot how much butter they put on that turkey.
