Smoked Chicken Enchilada Soup

I have made this several times with the home made enchilada sauce. This time I grilled the chicken first with some Dizzy Pig Mole. Added some apple wood for smoke. Great results, one of our favorites. It also freezes well...

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

That is delicious soup! Her homemade red enchilada sauce is great all by itself! And if you add ½ a small can of tomato paste to the sauce recipe, it's even better!
I hate it when I go to the kitchen for food and all I find are ingredients!

Nice cook on the white chicken chili and the chicken tortilla soup. We like to have at least two slow cooker recipes for weeknight dinners.

Made this yesterday and it was fantastic! Used homemade chili powder, using Alton Brown's recipe with whole dried chilis. Yummmm. Thanks for posting this.

I put a hurtin on some of this the last couple of days. Thank you for sharing. Fyi...I used 505 Hatch Valley Red Chile Sauce (enchilada) and their fire roasted green Chile's in this. Wow the flavor was excellent and healthy as well.Ellijay GA with a Medium & MiniMax

So you grilled the chicken breasts before putting it in with the soup, and then how long did you cook the soup on the grill for and @ what temp? going to make this Sunday I think. Looks great!

@ZachinSouthDakota I have made it in a crockpot, instapot and the Egg. For the Egg, it was indirect between 250 and 300 with some apple wood for about 90 minutes before I added the shredded chicken.
