Texas Monthly article about seasoned Q pits

Quite a read, focused on stick burners but likely applicable across the spectrum.  I admit that I do "clean" the stick burner after each use but not the BGE's.  I will continue to let the BGE's "season" as I figure the high heat cooks do a good job of self-cleaning.  That's my story.

  • I'm the same. My Klose stick burner gets cleaned every use. Eggs? Not so much...

I clean the grate on my BGE before each cook. I let high heat cooks clean the ceramic.  The wood oven is self cleaning because every firing is high heat. All I have to do is clean out ashes. The new stick burner gets cleaned after each use. It’s the most trouble to clean and care for but I think it’s worth it.

I keep the Karubecue clean, but the eggs fend for them selves. My SBGE is 75% for searing, and the LBGE I am concerned about doing a clean burn and cracking or loosing what gasket I have left. My KBQ is the go to for smoking now.
