Reverse seared ribeyes, acorn squash, fennel salad and a bottle of wine.

My father in law’s 89th birthday dinner. All he asked for was simple steaks. So steaks it was.
Steaks after the first flip during the reverse sear with some oak smoke:

Fennel salad: fennel, tomato, onion and salt.

The star of the meal was the double baked acorn squash my wife made. This stuff was incredible.

Steaks were done perfectly:

And we washed it down with a cab.

Since it it was the birthday dinner for my father in law, we fished the meal “his” way: a bit more of a shot of Limoncello after the chocolate birthday cake.

Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
Thanks for the comments everyone. The wine and limoncello must have got to my head as I posed the meal. As Ron pointed out, it was a zin not a cab. And after talking to my wife, the squash was a butternut squash not acorn.
Any who....
The recipe for the twice baked squash is simple.
Peel and de-seed the squash and cut into small, bite sized pieces.
Melt just enough butter to coat them. You do not want extra butter pooling at the bottom of the prowl after tossing.
Lightly sprinkle with light brown sugar at a rate of 1 tsp sugar/cup of squash.
Bake at 400F for 40 min flipping half way through.
Remove from oven and let cool.
Put back in oven at 400F for 25 more mins flipping half way through.
Serve.
