Miso Honey Chicken

@Botch 's Rusty Cheekun thread lead me to Foodwishes/Chef John site, I was like a kid in candy store, thanks @Botch .
Decided to try the Miso Honey chicken, wow it's a keeper for sure. Definitely will try Rusty chicken too.
Four half spatchcocks, slashed the thick parts, vac sealed to marinade for 3 hours only (due to late decision), cooked on Traeger at 350 with a few flips till thigh IT 175. Followed the recipe almost to the T, plus added my favourite Red Boat fish sauce to give it an unami boost. Delicious!


Decided to try the Miso Honey chicken, wow it's a keeper for sure. Definitely will try Rusty chicken too.

Decided to whip up a small batch of wings with the leftover marinade, also got the chance to test my modified flat basket on the diy XL joetisserie. It worked well with one logistical problem though: Due to tight compression, to prevent wing pieces from sliding, it was tedious to release each piece with the skin intact. Next time I may try the tumble basket instead. However, at the end of the day I'll probably just go back to making wings on the Traeger.

Do you really need the wings to be locked in place though? Looks really good. I really haven't had any success with chicken on the Traeger. I have a hard time keeping temps steady above 300deg. I prefer to do chicken closer to 400 which is much more in the BGE wheelhouse

Thanks! I can get 400 on the PRO 34. Love my Ranger, gets to 450 easily.
I would contact Traeger support to trouble shoot, may be you need a new controller.canuckland -
