It was so hard to not eat it when it was done.  Cooled overnight in the fridge, chilled in the freezer for 30 minutes and then sliced.





2 parts pepper, 1 part salt is the rub...



The butter bath:



Smoked for 3 hours at 250 dome temp, then wrapped in foil with butter until 160.
