Aaron Franklin's Smoked Turkey - Sliced for Lunchmeat
It was so hard to not eat it when it was done. Cooled overnight in the fridge, chilled in the freezer for 30 minutes and then sliced.
2 parts pepper, 1 part salt is the rub...
The butter bath:
Smoked for 3 hours at 250 dome temp, then wrapped in foil with butter until 160.

Turkey breast is a very underrated piece of meat to do year round. I usually stock up when they go to .99/lb here. Yours looks fantastic, some good sammiches in your future
